In the heart of Cape Town, where Table Mountain rises behind a vibrant cityscape, One&Only Cape Town offers a dining experience rooted in authenticity, soul, and sophistication. At its culinary helm is ROOI, the resort’s signature restaurant, where Chef Terrence Ford redefines South African Braai culture with fire, flavor, and finesse — served on Fine2Dine’s Curvo Forest, Aurora Green, and Kolon collections, supplied by our distributor JCP Hotelware.

The Braai Philosophy: Fire as Storyteller

Braai — derived from the Dutch word braden, meaning “to grill” — is more than a cooking method for Chef Terrence. “It’s about charred flavours, local Rooikrans wood with rich aromas, and cooking with natural elements. Braai connects us to heritage,” he explains.

At ROOI, this philosophy becomes tangible through a kitchen built around fire. “Cooking on open flames has allowed us to channel all the natural elements into our food,” Chef Terrence says. “Combined with great quality meat, it’s helped us truly embody open-flame cooking in our kitchen space.”

The Art of Tableware

For Chef Terrence, tableware is an extension of the story: “Braai is rustic and visual. So we use earthy tones and textured plates — they elevate the deep colors of medium-rare steaks and vegetables charred over flame.” The Curvo, Aurora and Kolon collections, in particular, frame dishes with natural depth, while durability and non-porosity remain essential for hygiene and long-term service.

“Functionality matters, of course. But what really counts is how the plate supports the food’s narrative,” he says.


A Visual Identity Shaped by Nature

For Roxanne Curtis, F&B Manager at One&Only Cape Town, aesthetics are a reflection of the setting. “We take inspiration from our surroundings — the ocean, the mountain, the city's vibrant culture. Every element, including the tableware, has to feel grounded and luxurious.”
